Getting saltiness right is one of the most important skills in cooking. Each dish type has an optimal salinity level — soups around 0.9%, stews around 1.3%, and stir-fries around 1.1%. This calculator converts target saltiness and ingredient weight into gram and teaspoon measurements for salt and soy sauce.
Salt has ~99% sodium chloride content; soy sauce is approximately 16% salinity. Never add all the seasoning at once — start with half, taste, and adjust gradually to avoid over-salting.
