Dish items take an allotment and a deduction; sanitation items take a deduction only. The final score is dish points allotted minus dish deductions minus the sanitation deductions applied, and it stops at 0. Setting a cap holds the sanitation penalties at that figure and reports how much was held back. A score exactly equal to the pass mark counts as met.
