How to Use the Pot & Pan Size Ingredient Calculator
Following the same recipe can be confusing when your pot or pan at home is a different size than the one the recipe was written for. This calculator uses your cookware's diameter to work out the cooking surface area, then applies a coefficient based on dish type to tell you the maximum amount of ingredients you can add without overfilling or crowding the pan. A larger surface area β and a dish type that tolerates less overlap β both allow for more food.
Stir-fries and deep frying are classic examples where overlapping ingredients ruin the result. Stack food more than one layer deep in a stir-fry pan and the bottom layer scorches while the top stays undercooked; drop too much food into hot oil at once and the oil temperature crashes, leaving food greasy instead of crisp. Soups and stews are more forgiving because the liquid surrounds the ingredients and distributes heat evenly, which is why they get a higher coefficient in this calculator.
Treat the result as an average guideline rather than an exact limit β ingredient density and water content vary, so it's often safer to stay a bit under the calculated amount. For deep frying in particular, also double-check that you have enough oil depth to fully submerge the food.
