Conventional ovens heat at about 7–8°F per minute, convection ovens slightly faster. For baking accuracy, use an oven thermometer since built-in displays often read higher than actual internal temperatures. Preheating 10–15°F above your target and then lowering to the target when food goes in can help compensate for temperature drop when opening the door.
Common baking temperatures: cookies 325–375°F, bread 375–425°F, cakes 325–350°F, pizza 425–500°F. Convection ovens should run 25°F lower or shorten baking time by 25%.
